Main program

16 – 22 August in Tsuruoka, Yamagata Prefecture

 

Since Tsuruoka become the first UNESCO City of Gastronomy in Japan, the city has aimed to be an international educational platform of gastronomy contributing to the sustainable cultural development of the UNESCO network.

 

This summer, we have organized the second edition of our exclusive program, including a wide range of culinary lessons, visits to see local food production, wild sea and forest foraging and unique fermenting technology used to produce Sake and Tsukemono (pickles).

 

The program is specially designed for a culinary chef from a UNESCO Creative City of Gastronomy for a mutual exchange of local culture and networking. We are happy to accept a limited number of international students and Gastronomy researchers from non-UNESCO networks (maximum twenty participants).

Sustainable seafood program

 12 August in Shima, Mie Prefecture

 

This is a pre-course to study sustainable Japanese coastal culture and fishery in an area with unique history and tradition of seafood culture in Japan.

 

We will meet with an Ama (diver) and local fishery experts to learn about various fish, seaweed, and clams used in local dishes, while we learn how sea and mountain are connected ecologically to sustain the local environment.

 

The course is designed not only for culinary experts but also good for agriculture, fishery-related professionals who are interested in ecology and sustainability in Japan. This course is available for a very limited time.

Arrival information for Tsuruoka Program

  • Main program participants are recommended to book an international flight to Tokyo (Narita or Haneda airport). 
  • The transportation to Tsuruoka city is a pre-arranged overnight bus from Tokyo city center. 
  • Departure date from Tokyo will be 15 August from Tokyo Shinjuku city bus terminal. Please ensure your international flight arrival date and time is before 15 August 4 p.m
  • There is an option with an additional fee of 70 Euro (single way) to take a flight from Tokyo Haneda for 1 hour. In this case, departure date will be early morning on 16 August. 

 

Arrival information for Shima Program

  • We recommend you to take an international flight to Osaka (Kansai airport) or Nagoya airport for the Shima program.
  • The transportation to Shima city is via trains from Osaka city center. We are also able to arrange a train from Nagoya city upon your request.
  • If you wish to extend your stay for the main program, we are happy to support arrangement of domestic transport and accommodation (extra payment) to the Tokyo area.

International Flight Information for  Kayak


Tuition fee and conditions

  • 1,000 euro for seven-day main program, including all program costs, translation in English (Italian language support is available upon request), taxes, accommodation (shared rooms), meals (at least twice per day) with domestic transport (from Tokyo city center to Tsuruoka city). 
  • Please note that tuition cost is excluding international flight to Japan. International flights are roughly calculated 750 euro to 1000 euro depending on your date of departure and starting location. 
  • Transaction method (credit card or wire-transfer) will be decided when you receive a formal acceptance letter. All transaction must be completed fully seven days prior to the date of arrival. 
  • 500 euro for four-day program of Sustainable Sea has the same conditions as the main program. Domestic transportation will be covered from Nagoya city or Osaka city to Shima city (not from Tokyo).
  • Reimbursement of paid tuition is possible only if the participant has been denied a VISA by the Japanese government. No reimbursement will be approved for applications that do not fulfil these criteria. 
  • Applying for insurance is the responsibility of the participant.
